You can create a php.ini in the root folder and add the settings to turn it off.

Or you can turn it off in the .htaccess file in the root. This gives 500 error on some servers.

or you could do that ;). But if you have cpanel I find it easier to install through there services section. It gives a detailed explanation of what each setting does. It also makes recommendations on what could be a security weakness.
