FIXED - Since boonex seems to be overwhelmed, I found a way to fix this. It is very time consuming but I went into the MySql database using phpMyAdmin and manually changed the featured profile item in the Profiles field to 0 instead of 1 or 2. Some members were listed as 1 and others as 2 under the Featured Member field in the Profiles table.

Regarding Date of Birth, I opened up my database backup that I made prior to the upgrade and got everyone's date of birth from that. Then I was able to see more go into the ADMIN section of Dolphin and under the Members, went in one by one and added the Date of Birth. Be aware that the format for entering DOB in the ADMIN is DD-MM-YYYY rather than the US conventional MM-DD-YYYY.
