I have just completed the Dolphin 6.1.2 upgrade, all seems to work well...
I was also very nervous about deleting the plugins/tiny_mce folder and replacing it with the updated folder... but it worked fine and saved me hours (millions of files...)
In admin, choose profiles, and click at any (calling pedit.php), and in top of this page here are possibility to change membership of profile

Upgrading membership works, (but does not show the change in admin area) from members profile set membership to new required level then save (at bottom).
It will not show as changed in admin area, but if re check the members profile you will see the membership level change as been made for the member.
