Altering Category Options

Anyone know where to direct me to find how I can alter the options in these category options.

Current options are:
 BoonEx Products
Default
Some Useful Info

This drop down was in the Articles Module, but I have seen it in other Modules. Currently looking where i can change these and make my own.

Go into the admin section under settings then Categories Settings
