Display custom fields in member profile?

Ok, in the custom field builder, I added "race" and "ethnic" fields. Now, in the Profiles, under "General Info" or "Misc" or even a new box, how do I display them?

In the Fields Builder, choose the tab Profile View and just drag the item you created from the inactive to the active area.

I tried that, but I don't see it when I view a user profile.

You have to do that for both Member and Visitor (radio buttons).

The problem is, what if I only want admin/member to see certain profile features, but not visitors?

Example: an admin can see "address" in someone profile, but not a visitor.
